A hearty and healthy slow cooker recipe featuring tender chicken breasts cooked with fresh kale and aromatic garlic, perfect for an easy weeknight dinner.
4 boneless, skinless chicken breasts
4 cups chopped kale, ribs removed
1 medium onion, diced
3 cloves garlic, minced
1 cup low-sodium chicken broth
1 teaspoon dried thyme
1 teaspoon smoked paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons olive oil
1 tablespoon lemon juice
Heat olive oil in a skillet over medium-high heat.
Add the chicken breasts and sear each side for 2-3 minutes until lightly browned. Remove from heat.
Place the diced onion and minced garlic at the bottom of the slow cooker.
Add the chopped kale on top of the onions and garlic.
Place the seared chicken breasts on top of the kale.
Pour the chicken broth over the ingredients in the slow cooker.
Sprinkle dried thyme, smoked paprika, salt, and black pepper evenly over the chicken and kale.
Cover and cook on low for 4 hours, or until the chicken is cooked through and tender.
Once cooked, remove the chicken breasts and shred or slice as desired.
Stir lemon juice into the kale mixture in the slow cooker.
Serve the shredded or sliced chicken over the cooked kale and enjoy.
