A creamy and comforting slow cooker pumpkin soup made with simple ingredients, perfect for cozy fall days.
1 tablespoon olive oil
1 medium onion, chopped
2 cloves garlic, minced
4 cups pumpkin puree (fresh or canned)
3 cups vegetable broth
1 cup coconut milk
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon ground ginger
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons maple syrup
Heat the olive oil in a skillet over medium heat.
Add the chopped onion and cook for 5 minutes until softened.
Add the minced garlic and cook for 1 minute until fragrant.
Transfer the cooked onion and garlic to the slow cooker.
Add the pumpkin puree, vegetable broth, coconut milk, ground cinnamon, ground nutmeg, ground ginger, salt, black pepper, and maple syrup to the slow cooker.
Stir all ingredients together until well combined.
Cover and cook on low for 6 hours.
After cooking, use an immersion blender to puree the soup until smooth. Alternatively, carefully transfer the soup in batches to a blender and blend until smooth.
Taste and adjust seasoning if needed.
