Slow Cooker Shredded Beef

Tender and flavorful shredded beef cooked slowly in a savory sauce, perfect for sandwiches, tacos, or served over rice.

3 pounds beef chuck roast, trimmed of excess fat
1 tablespoon olive oil
1 large onion, sliced
4 cloves garlic, minced
1 cup beef broth
1/4 cup tomato paste
2 tablespoons Worcestershire sauce
1 tablespoon chili powder
1 teaspoon ground cumin
1 teaspoon smoked paprika
1/2 teaspoon salt
1/2 teaspoon black pepper

Instructions

Heat olive oil in a large skillet over medium-high heat.
Sear the beef chuck roast on all sides until browned, about 3-4 minutes per side.
Place the sliced onion and minced garlic in the bottom of the slow cooker.
Transfer the seared beef roast on top of the onions and garlic in the slow cooker.
In a medium bowl, whisk together beef broth, tomato paste, Worcestershire sauce, chili powder, ground cumin, smoked paprika, salt, and black pepper until well combined.
Pour the sauce mixture over the beef in the slow cooker.
Cover and cook on low for 8 hours, or until the beef is very tender and easily shredded with a fork.
Remove the beef from the slow cooker and place it on a large plate or cutting board.
Use two forks to shred the beef into bite-sized pieces.
Return the shredded beef to the slow cooker and stir to combine with the cooking juices.
Serve immediately or keep warm in the slow cooker until ready to serve.
