Slow Cooker Unstuffed Low Carb Cabbage Roll Soup

A comforting and hearty low carb soup that captures all the flavors of traditional cabbage rolls without the hassle of stuffing. Made in the slow cooker, this unstuffed cabbage roll soup is perfect for an easy, healthy meal.

1 pound ground beef
1 small head green cabbage, chopped (about 6 cups)
1 medium onion, diced
3 cloves garlic, minced
1 (14.5 ounce) can diced tomatoes, undrained
1 (8 ounce) can tomato sauce
4 cups beef broth
2 tablespoons apple cider vinegar
1 tablespoon Worcestershire sauce
1 teaspoon dried oregano
1 teaspoon dried basil
1/2 teaspoon smoked paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon crushed red pepper flakes
2 tablespoons olive oil

Instructions

Heat olive oil in a large skillet over medium heat.
Add diced onion and cook until translucent, about 3-4 minutes.
Add minced garlic and cook for an additional 1 minute until fragrant.
Add ground beef to the skillet and cook until browned, breaking it apart with a spoon, about 6-8 minutes.
Drain excess fat from the skillet and transfer the cooked beef, onion, and garlic mixture to the slow cooker.
Add chopped cabbage, diced tomatoes with their juice, tomato sauce, beef broth, apple cider vinegar, and Worcestershire sauce to the slow cooker.
Sprinkle in dried oregano, dried basil, smoked paprika, salt, black pepper, and crushed red pepper flakes.
Stir all ingredients in the slow cooker to combine well.
Cover and cook on low for 6 hours, or until the cabbage is tender.
Taste and adjust seasoning if needed before serving.
