2 pounds Yukon Gold potatoes, peeled and diced into 1-inch cubes
1 medium yellow onion, diced
3 cloves garlic, minced
4 cups low-sodium chicken broth
1 cup whole milk
1 cup shredded sharp cheddar cheese
1/2 cup shredded Parmesan cheese
1/2 cup sour cream
4 slices bacon, cooked and crumbled
2 tablespoons unsalted butter
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon dried thyme
1/4 cup chopped green onions, for garnish
Place the diced Yukon Gold potatoes, diced onion, and minced garlic into the slow cooker.
Pour in the chicken broth and stir in the salt, black pepper, and dried thyme.
Cover and cook on low for 6 hours, or until the potatoes are tender when pierced with a fork.
Using a potato masher or immersion blender, partially mash the potatoes in the slow cooker to your desired consistency, leaving some chunks for texture.
