Tandoori Chicken

Tandoori Chicken is a classic Indian dish featuring chicken marinated in a blend of yogurt and spices, then roasted to perfection for a smoky, flavorful experience.

4 bone-in, skinless chicken thighs
1 cup plain yogurt
2 tablespoons lemon juice
2 tablespoons vegetable oil
2 teaspoons ground cumin
2 teaspoons ground coriander
2 teaspoons paprika
1 teaspoon turmeric powder
1 teaspoon garam masala
1 teaspoon chili powder
1 teaspoon salt
1 teaspoon grated fresh ginger
3 garlic cloves, minced
1/2 teaspoon ground black pepper
Fresh cilantro leaves, for garnish
Lemon wedges, for serving

Instructions

In a large bowl, combine the yogurt, lemon juice, vegetable oil, ground cumin, ground coriander, paprika, turmeric powder, garam masala, chili powder, salt, grated fresh ginger, minced garlic, and ground black pepper. Mix well to create the marinade.
Make 2-3 deep slashes in each chicken thigh to allow the marinade to penetrate.
Add the chicken thighs to the marinade and coat thoroughly. Cover the bowl with plastic wrap and refrigerate for at least 4 hours, preferably overnight.
Preheat the oven to 425°F (220°C). Line a baking sheet with aluminum foil and place a wire rack on top.
Arrange the marinated chicken thighs on the wire rack, allowing excess marinade to drip off.
Bake in the preheated oven for 35-40 minutes, turning once halfway through, until the chicken is cooked through and slightly charred at the edges.
Remove from the oven and let rest for 5 minutes.
Garnish with fresh cilantro leaves and serve with lemon wedges.
