1 pound boneless skinless chicken breast, cut into bite-sized pieces
2 tablespoons low-sodium soy sauce
1 tablespoon cornstarch
1 tablespoon olive oil
3 cups broccoli florets
3 cloves garlic, minced
1 teaspoon fresh ginger, grated
2 tablespoons low-sodium soy sauce
1 tablespoon honey
1 tablespoon rice vinegar
1 tablespoon water
1 teaspoon toasted sesame oil
1 tablespoon sesame seeds
2 green onions, thinly sliced
In a medium bowl, combine the chicken pieces, 2 tablespoons soy sauce, and cornstarch. Toss to coat evenly and set aside for 5 minutes.
Heat olive oil in a large skillet over medium-high heat. Add the chicken and cook for 5-6 minutes until golden brown and cooked through. Remove chicken from the skillet and set aside.
In the same skillet, add the broccoli florets and 2 tablespoons water. Cover and steam for 3-4 minutes until broccoli is tender-crisp.
Add the minced garlic and grated ginger to the skillet with the broccoli. Cook for 1 minute until fragrant.
In a small bowl, whisk together 2 tablespoons soy sauce, honey, rice vinegar, and toasted sesame oil.
Return the cooked chicken to the skillet. Pour the sauce over the chicken and broccoli. Stir well to coat everything evenly and cook for another 2 minutes until heated through and sauce thickens slightly.
Remove from heat and sprinkle with sesame seeds and sliced green onions before serving.
