2 cups all-purpose flour
1 packet active dry yeast (2 1/4 tsp)
3/4 cup warm water
1 tsp salt
2 tbsp olive oil
1 cup shredded mozzarella cheese
8 slices deli ham
1/2 cup tomato sauce
1/2 cup diced green bell pepper
In a bowl, dissolve yeast in warm water and let sit for 5 minutes until foamy.
Add flour, salt, and olive oil to the yeast mixture. Knead until a smooth dough forms.
Cover the dough and let it rise for 15 minutes.
Preheat oven to 400°F (200°C).
Divide dough into 4 equal portions and roll each into a rectangle.
Layer shredded mozzarella, deli ham slices, and diced green bell pepper on half of each rectangle.
Fold dough over filling and seal edges by pressing firmly.
Place hot pockets on a baking sheet lined with parchment paper.
Bake for 15 minutes or until crust is golden and crispy.
Serve hot pockets on a white ceramic plate with a small ramekin of tomato sauce for dipping.
