A moist and tender banana bread with a slightly crisp crust, flavored with vanilla and cinnamon. Rustic and homey, perfect for a comforting treat.
1 cup ripe bananas, mashed
1 1/2 cups all-purpose flour
1/2 cup granulated sugar
1/4 cup brown sugar
1/3 cup unsalted butter, melted
2 eggs
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
Preheat your oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper.
In a large bowl, combine the mashed ripe bananas, melted unsalted butter, granulated sugar, brown sugar, and vanilla extract. Mix well.
Beat in the eggs one at a time until fully incorporated.
In a separate bowl, whisk together the all-purpose flour, baking soda, salt, and ground cinnamon.
Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Do not overmix.
Pour the batter into the prepared loaf pan and smooth the top.
Bake for 50 minutes or until a toothpick inserted into the center comes out clean.
Let the banana bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Slice the loaf into even rectangular pieces and arrange in a staggered stack on a plain white rectangular plate for serving.
