Corn Chicken Casserole

A comforting and hearty Corn Chicken Casserole made with tender chicken, sweet corn, creamy sauce, and topped with melted cheese. Perfect for a family dinner or potluck.

2 cups cooked chicken breast, shredded
1 can (15.25 ounces) whole kernel corn, drained
1 can (14.75 ounces) cream-style corn
1 cup sour cream
1 cup shredded cheddar cheese
1/2 cup mayonnaise
1/2 cup chopped onion
1/2 cup chopped green bell pepper
1 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1 cup crushed buttery crackers (such as Ritz)
2 tablespoons unsalted butter, melted

Instructions

Preheat the oven to 350°F (175°C).
In a large mixing bowl, combine the shredded cooked chicken, whole kernel corn, cream-style corn, sour cream, mayonnaise, chopped onion, chopped green bell pepper, garlic powder, salt, and black pepper. Mix well until all ingredients are evenly incorporated.
Transfer the mixture into a 9×13-inch baking dish and spread it out evenly.
Sprinkle 1/2 cup of shredded cheddar cheese evenly over the casserole mixture.
In a small bowl, combine the crushed buttery crackers with the melted butter. Mix until the crumbs are evenly coated.
Sprinkle the buttered cracker crumbs over the cheese layer.
Bake in the preheated oven for 35 to 40 minutes, or until the casserole is bubbly and the topping is golden brown.
Remove from the oven and sprinkle the remaining 1/2 cup shredded cheddar cheese on top.
Return to the oven and bake for an additional 5 minutes, or until the cheese is melted.
Let the casserole cool for 5 minutes before serving.
