Apple Zucchini Cake

A moist and flavorful apple zucchini cake that combines the sweetness of apples with the freshness of zucchini, perfect for a delicious dessert or snack.

2 cups all-purpose flour
1 1/2 teaspoons baking soda
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon salt
1/2 cup granulated sugar
1/2 cup packed light brown sugar
3 large eggs
1 cup vegetable oil
1 teaspoon vanilla extract
1 1/2 cups peeled and grated zucchini (about 1 medium zucchini)
1 1/2 cups peeled and grated apple (about 1 medium apple)
1/2 cup chopped walnuts (optional)

Instructions

Preheat the oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
In a medium bowl, whisk together the all-purpose flour, baking soda, ground cinnamon, ground nutmeg, and salt. Set aside.
In a large bowl, beat the granulated sugar, light brown sugar, and eggs until well combined.
Add the vegetable oil and vanilla extract to the sugar and egg mixture and mix until smooth.
Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
Fold in the grated zucchini, grated apple, and chopped walnuts (if using) until evenly distributed.
Pour the batter into the prepared baking pan and spread it evenly.
Bake in the preheated oven for 40 to 45 minutes, or until a toothpick inserted into the center comes out clean.
Remove the cake from the oven and let it cool in the pan on a wire rack for at least 20 minutes before slicing and serving.
