Flourless Almond Joy Greek Yogurt Cake

A rich and moist flourless cake inspired by the flavors of Almond Joy candy bars, featuring almonds, coconut, and chocolate, all balanced with tangy Greek yogurt.

1 1/2 cups blanched almond flour
1/2 cup unsweetened shredded coconut
1/4 cup cocoa powder
1 teaspoon baking powder
1/4 teaspoon salt
3 large eggs
1 cup plain Greek yogurt
1/2 cup honey
1 teaspoon vanilla extract
1/2 cup sliced almonds
1/2 cup semisweet chocolate chips

Instructions

Preheat the oven to 350°F (175°C). Grease an 8-inch round cake pan and line the bottom with parchment paper.
In a large bowl, whisk together the almond flour, shredded coconut, cocoa powder, baking powder, and salt until well combined.
In a separate medium bowl, beat the eggs. Add the Greek yogurt, honey, and vanilla extract, and whisk until smooth.
Pour the wet ingredients into the dry ingredients and gently fold together until just combined.
Fold in the sliced almonds and chocolate chips evenly into the batter.
Pour the batter into the prepared cake pan and smooth the top with a spatula.
Bake for 35 to 40 minutes, or until a toothpick inserted into the center comes out clean or with just a few moist crumbs.
Remove the cake from the oven and allow it to cool in the pan for 15 minutes.
Run a knife around the edges to loosen the cake, then invert it onto a wire rack to cool completely before serving.
