1 cup unsalted butter, softened
3/4 cup granulated sugar
1/2 teaspoon vanilla extract
2 cups all-purpose flour
1/4 teaspoon salt
3/4 cup dried cherries, chopped
Preheat the oven to 325°F (163°C). Line a baking sheet with parchment paper.
In a large bowl, cream together the softened butter and granulated sugar until light and fluffy, about 3-4 minutes.
Add the vanilla extract and mix until combined.
In a separate bowl, whisk together the all-purpose flour and salt.
Gradually add the flour mixture to the butter mixture, mixing just until combined.
Fold in the chopped dried cherries evenly throughout the dough.
Turn the dough onto a lightly floured surface and knead gently to bring it together.
Roll the dough out to about 1/2 inch thickness.
Use a cookie cutter to cut out desired shapes and place them on the prepared baking sheet about 1 inch apart.
