Cilantro Lime Chicken

A flavorful and zesty Cilantro Lime Chicken marinated with fresh lime juice, garlic, and cilantro, then grilled to juicy perfection. Perfect for a quick weeknight dinner or meal prep.

1 pound boneless, skinless chicken breasts
1/4 cup fresh lime juice (about 2 limes)
1/4 cup chopped fresh cilantro leaves
3 cloves garlic, minced
2 tablespoons olive oil
1 teaspoon ground cumin
1/2 teaspoon salt
1/4 teaspoon black pepper

Instructions

In a medium bowl, whisk together the lime juice, chopped cilantro, minced garlic, olive oil, ground cumin, salt, and black pepper to create the marinade.
Place the chicken breasts in a large resealable plastic bag or shallow dish and pour the marinade over the chicken. Seal the bag or cover the dish and refrigerate for at least 30 minutes, up to 2 hours.
Preheat a grill or grill pan over medium-high heat.
Remove the chicken from the marinade and discard the marinade.
Grill the chicken for 6 to 8 minutes per side, or until the internal temperature reaches 165°F (74°C) and the chicken is cooked through.
Transfer the chicken to a plate and let it rest for 5 minutes before slicing.
Serve the cilantro lime chicken garnished with additional fresh cilantro if desired.
