A delicious and easy one-pan meal featuring savory apple gouda chicken sausage roasted with sweet potatoes, apples, and Brussels sprouts, perfect for a quick weeknight dinner.
1 pound apple gouda chicken sausage, sliced into 1/2-inch pieces
2 medium sweet potatoes, peeled and cut into 1-inch cubes
2 cups Brussels sprouts, trimmed and halved
1 large apple, cored and cut into 1-inch chunks
2 tablespoons olive oil
1 teaspoon dried thyme
1 teaspoon garlic powder
1/2 teaspoon smoked paprika
Salt, to taste
Black pepper, to taste
Preheat the oven to 425°F (220°C).
Line a large sheet pan with parchment paper or lightly grease it with olive oil.
In a large bowl, combine the sweet potatoes, Brussels sprouts, and apple chunks.
Add 1 tablespoon of olive oil, dried thyme, garlic powder, smoked paprika, salt, and black pepper to the bowl. Toss everything together until evenly coated.
Spread the vegetable and apple mixture evenly on the prepared sheet pan.
Place the sliced apple gouda chicken sausage on top of the vegetables and apples in a single layer.
Drizzle the remaining 1 tablespoon of olive oil over the sausage and vegetables.
