1 (4-pound) boneless skin-on turkey breast
2 tablespoons olive oil
1 tablespoon paprika
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon dried oregano
1 teaspoon dried thyme
1 teaspoon cayenne pepper
1 teaspoon black pepper
1 teaspoon salt
4 medium carrots, peeled and cut into 1-inch pieces
3 medium red potatoes, cut into 1-inch cubes
2 medium bell peppers (red or green), sliced into strips
1 medium yellow onion, cut into wedges
3 cloves garlic, minced
2 tablespoons unsalted butter, melted
1/4 cup low sodium chicken broth

Instructions

Preheat the oven to 375°F (190°C).
In a small bowl, combine paprika, garlic powder, onion powder, oregano, thyme, cayenne pepper, black pepper, and salt to create the Cajun seasoning.
Pat the turkey breast dry with paper towels. Rub 1 tablespoon of olive oil evenly over the turkey breast.
Generously coat the turkey breast with the Cajun seasoning, pressing it into the skin and meat.
In a large mixing bowl, combine carrots, red potatoes, bell peppers, onion wedges, and minced garlic.
Drizzle the vegetables with the remaining 1 tablespoon olive oil and the melted butter. Toss to coat evenly.
Place the seasoned turkey breast in the center of a large roasting pan or baking dish.
Arrange the prepared vegetables around the turkey breast in the roasting pan.
Pour the chicken broth into the bottom of the roasting pan to keep the vegetables moist during baking.
Bake in the preheated oven for about 1 hour and 15 minutes, or until the internal temperature of the turkey breast reaches 165°F (74°C) when measured with a meat thermometer.
Halfway through baking (around 35-40 minutes), baste the turkey breast and vegetables with the pan juices to keep them moist.
Once cooked, remove the turkey breast from the oven and let it rest for 10 minutes before slicing.
Serve the sliced Cajun baked turkey breast with the roasted vegetables on the side.
