A comforting and hearty chicken hash brown casserole made with tender cooked chicken, crispy hash browns, creamy cheese sauce, and a crunchy topping. Perfect for a family dinner or potluck.
3 cups cooked chicken, shredded or diced
4 cups frozen shredded hash browns, thawed
1 cup sour cream
1 can (10.5 ounces) condensed cream of chicken soup
1/2 cup mayonnaise
1 cup shredded cheddar cheese
1/2 cup shredded mozzarella cheese
1/4 cup finely chopped yellow onion
1/4 teaspoon garlic powder
1/4 teaspoon black pepper
1/2 teaspoon salt
1 1/2 cups crushed cornflakes
3 tablespoons unsalted butter, melted
Preheat the oven to 350°F (175°C). Lightly grease a 9×13 inch baking dish.
In a large mixing bowl, combine the cooked chicken, thawed hash browns, sour cream, condensed cream of chicken soup, mayonnaise, shredded cheddar cheese, shredded mozzarella cheese, chopped onion, garlic powder, black pepper, and salt. Mix thoroughly until all ingredients are well incorporated.
Transfer the mixture into the prepared baking dish and spread evenly.
In a small bowl, mix the crushed cornflakes with the melted butter until the cornflakes are evenly coated.
Sprinkle the buttered cornflakes evenly over the top of the casserole.
Bake in the preheated oven for 45 to 50 minutes, or until the casserole is bubbly and the topping is golden brown.
Remove from the oven and let it rest for 5 minutes before serving.
