8 chicken drumsticks, skin on
4 cloves garlic, minced
1 medium white onion, finely chopped
1/4 cup fresh lime juice
1/4 cup fresh orange juice
1/4 cup vegetable oil
1 tablespoon white vinegar
1 teaspoon ground cumin
1 teaspoon smoked paprika
1 teaspoon dried oregano
1/2 teaspoon ground black pepper
1 teaspoon salt
1/4 cup fresh cilantro, chopped

Instructions

In a large mixing bowl, combine the minced garlic, chopped white onion, lime juice, orange juice, vegetable oil, white vinegar, ground cumin, smoked paprika, dried oregano, ground black pepper, and salt. Stir well to create the marinade.
Add the chicken drumsticks to the marinade, ensuring each piece is fully coated. Cover the bowl with plastic wrap and refrigerate for at least 2 hours, preferably overnight for best flavor.
Preheat the oven to 400°F (200°C). Line a baking sheet with aluminum foil and place a wire rack on top.
Arrange the marinated chicken drumsticks on the wire rack, allowing excess marinade to drip off.
Bake the chicken drumsticks in the preheated oven for 30 to 35 minutes, turning halfway through cooking, until the skin is golden brown and the internal temperature reaches 165°F (74°C).
Remove the chicken from the oven and let it rest for 5 minutes.
Sprinkle the chopped fresh cilantro over the chicken drumsticks before serving.
