Beef Casserole with Ground Beef and Doritos

A hearty and flavorful beef casserole featuring ground beef, a rich tomato sauce, and a crunchy Doritos topping for an irresistible twist.

1 pound ground beef
1 medium onion, diced
2 cloves garlic, minced
1 can (14.5 ounces) diced tomatoes, undrained
1 can (8 ounces) tomato sauce
1 cup frozen mixed vegetables (carrots, peas, corn)
1 teaspoon dried Italian seasoning
1/2 teaspoon salt
1/4 teaspoon black pepper
2 cups crushed Nacho Cheese Doritos
1 cup shredded cheddar cheese
2 tablespoons olive oil

Instructions

Preheat the oven to 350°F (175°C).
Heat olive oil in a large skillet over medium heat.
Add diced onion and minced garlic to the skillet and sauté for 3-4 minutes until softened.
Add ground beef to the skillet and cook, breaking it apart with a spoon, until browned and cooked through, about 6-8 minutes.
Drain excess fat from the skillet.
Stir in diced tomatoes with their juice, tomato sauce, frozen mixed vegetables, Italian seasoning, salt, and black pepper.
Simmer the mixture for 10 minutes, stirring occasionally.
Transfer the beef mixture to a 9×13-inch casserole dish and spread evenly.
Sprinkle shredded cheddar cheese evenly over the beef mixture.
Top the cheese layer with crushed Nacho Cheese Doritos, spreading them evenly.
Bake in the preheated oven for 20-25 minutes, until the cheese is melted and bubbly and the Doritos topping is slightly toasted.
Remove from the oven and let the casserole cool for 5 minutes before serving.
