A creamy, low-carb chicken broccoli casserole perfect for a keto diet. This dish combines tender chicken, fresh broccoli, and a rich cheese sauce for a comforting and satisfying meal.
3 cups cooked chicken breast, shredded
4 cups fresh broccoli florets
1 cup shredded cheddar cheese
1 cup shredded mozzarella cheese
1/2 cup cream cheese, softened
1/2 cup sour cream
1/4 cup mayonnaise
1/4 cup grated Parmesan cheese
1/2 cup heavy cream
2 cloves garlic, minced
1 teaspoon onion powder
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons olive oil
Preheat the oven to 375°F (190°C).
Bring a large pot of water to a boil. Add the broccoli florets and cook for 2-3 minutes until bright green and slightly tender. Drain and set aside.
In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
In a large mixing bowl, combine cream cheese, sour cream, mayonnaise, heavy cream, onion powder, salt, and black pepper. Mix until smooth.
Add shredded chicken, cooked broccoli, cheddar cheese, mozzarella cheese, and half of the Parmesan cheese to the bowl. Stir until all ingredients are evenly coated with the sauce.
Transfer the mixture to a greased 9×13 inch casserole dish and spread evenly.
Sprinkle the remaining Parmesan cheese evenly over the top.
Bake in the preheated oven for 25-30 minutes, until the casserole is bubbly and the cheese is golden brown.
Remove from the oven and let it cool for 5 minutes before serving.
