A comforting and easy chicken casserole made with tender chicken, mixed vegetables, and Knorr seasoning for a flavorful, hearty meal.
4 boneless, skinless chicken breasts, cut into bite-sized pieces
1 tablespoon olive oil
1 medium onion, diced
2 cloves garlic, minced
2 cups frozen mixed vegetables (carrots, peas, corn, green beans)
1 packet Knorr chicken seasoning mix (about 30 grams)
1 cup chicken broth
1 cup sour cream
1 cup shredded cheddar cheese
1/2 cup milk
2 cups cooked white rice
1/2 teaspoon black pepper
1/2 teaspoon dried thyme
1/2 teaspoon paprika
Preheat the oven to 350°F (175°C).
Heat olive oil in a large skillet over medium heat.
Add diced onion and minced garlic to the skillet and sauté for 3-4 minutes until softened.
Add the chicken pieces to the skillet and cook for 5-6 minutes until lightly browned but not fully cooked through.
Stir in the frozen mixed vegetables and cook for another 3 minutes.
In a separate bowl, combine the Knorr chicken seasoning mix, chicken broth, sour cream, milk, black pepper, dried thyme, and paprika. Mix well.
Add the cooked rice to the skillet with the chicken and vegetables, then pour the sour cream mixture over everything. Stir to combine thoroughly.
Transfer the mixture to a greased 9×13 inch casserole dish.
Sprinkle the shredded cheddar cheese evenly on top of the casserole.
Bake uncovered in the preheated oven for 35-40 minutes, or until the casserole is bubbly and the cheese is melted and golden brown.
Remove from the oven and let rest for 5 minutes before serving.
