A delicious one-pan meal featuring tender chicken breasts smothered in caramelized onions and melted Swiss cheese, inspired by classic French onion soup flavors.
4 boneless, skinless chicken breasts (about 6 ounces each)
1 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons olive oil
4 large yellow onions, thinly sliced
2 tablespoons unsalted butter
2 teaspoons granulated sugar
3 cloves garlic, minced
1/2 cup dry white wine
1 1/2 cups beef broth
1 teaspoon fresh thyme leaves
4 slices Swiss cheese
2 tablespoons chopped fresh parsley
Season both sides of the chicken breasts with salt and black pepper.
Heat olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook for 5-6 minutes on each side until golden brown and cooked through. Remove chicken from the skillet and set aside.
Reduce heat to medium. Add butter to the same skillet. Once melted, add the sliced onions and granulated sugar. Cook, stirring frequently, for 15-20 minutes until onions are deeply caramelized.
Add minced garlic to the caramelized onions and cook for 1 minute until fragrant.
Pour in the white wine to deglaze the skillet, scraping up any browned bits from the bottom. Cook for 2-3 minutes until the wine reduces slightly.
Add beef broth and fresh thyme leaves to the skillet. Stir and bring to a simmer.
Return the chicken breasts to the skillet, nestling them into the onion mixture. Spoon some onions over the chicken.
Place a slice of Swiss cheese on top of each chicken breast. Cover the skillet with a lid and cook for 3-5 minutes until the cheese melts.
Sprinkle chopped fresh parsley over the dish before serving.
