Freezer Huli Huli Chicken

A flavorful Hawaiian-inspired Huli Huli Chicken recipe that you can prepare ahead and freeze for easy cooking later. Marinated in a sweet and tangy sauce, this chicken is perfect grilled or baked straight from the freezer.

1/2 cup soy sauce
1/2 cup brown sugar, packed
1/4 cup ketchup
1/4 cup pineapple juice
2 tablespoons rice vinegar
2 tablespoons grated fresh ginger
2 cloves garlic, minced
1 teaspoon smoked paprika
1/2 teaspoon ground black pepper
2 pounds boneless, skinless chicken thighs

Instructions

In a medium bowl, whisk together soy sauce, brown sugar, ketchup, pineapple juice, rice vinegar, grated ginger, minced garlic, smoked paprika, and black pepper until the sugar is dissolved and the marinade is well combined.
Place the chicken thighs in a large resealable freezer bag.
Pour the marinade over the chicken in the bag, seal the bag removing as much air as possible, and massage the marinade into the chicken to coat evenly.
Lay the bag flat in the freezer and freeze for up to 3 months.
When ready to cook, thaw the chicken in the refrigerator overnight.
Preheat your grill to medium-high heat or preheat the oven to 400°F (200°C).
Remove the chicken from the marinade and discard the marinade.
Grill the chicken for 6-8 minutes per side or bake on a lined baking sheet for 25-30 minutes, until the internal temperature reaches 165°F (74°C) and the chicken is cooked through.
Let the chicken rest for 5 minutes before serving.
