A delicious and high-protein beef gyro made with seasoned ground beef, fresh vegetables, and creamy tzatziki sauce, all wrapped in warm pita bread. Perfect for a satisfying and nutritious meal.
1 pound lean ground beef (90% lean)
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon dried oregano
1/2 teaspoon ground cumin
1/2 teaspoon smoked paprika
1/4 teaspoon black pepper
1/2 teaspoon salt
4 whole wheat pita breads (6-inch diameter)
1 cup Greek yogurt (non-fat)
1/2 cucumber, finely grated and drained
1 tablespoon fresh lemon juice
1 tablespoon fresh dill, chopped
1 clove garlic, minced
1/4 teaspoon salt (for tzatziki)
1 medium tomato, thinly sliced
1/2 medium red onion, thinly sliced
1 cup shredded lettuce
In a large bowl, combine the ground beef, garlic powder, onion powder, dried oregano, ground cumin, smoked paprika, black pepper, and salt. Mix thoroughly until all spices are evenly incorporated.
Heat a large non-stick skillet over medium-high heat. Add the seasoned ground beef and cook for 8-10 minutes, breaking it apart with a spatula, until fully cooked and browned. Drain any excess fat and set aside.
While the beef cooks, prepare the tzatziki sauce. In a medium bowl, combine the Greek yogurt, grated cucumber, lemon juice, chopped dill, minced garlic, and 1/4 teaspoon salt. Stir well and refrigerate until ready to use.
Warm the whole wheat pita breads in a dry skillet over medium heat for about 1 minute per side or until soft and pliable.
To assemble each gyro, place a warm pita bread on a plate. Spread approximately 2 tablespoons of tzatziki sauce in the center.
Add about 1/4 of the cooked beef on top of the sauce.
Layer with sliced tomato, red onion, and shredded lettuce.
Fold the pita around the fillings and serve immediately.
