These high protein chicken and zucchini fritters are a delicious and healthy option for a quick meal or snack. Packed with lean chicken breast and fresh zucchini, they are perfect for anyone looking to boost their protein intake without sacrificing flavor.

1 pound boneless, skinless chicken breast, finely chopped
2 medium zucchinis, grated
1/4 cup grated Parmesan cheese
2 large eggs
1/4 cup almond flour
2 cloves garlic, minced
1/4 cup finely chopped green onions
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons olive oil

Instructions

Place the grated zucchini in a clean kitchen towel and squeeze out excess moisture.
In a large bowl, combine the finely chopped chicken breast, grated zucchini, Parmesan cheese, eggs, almond flour, minced garlic, chopped green onions, salt, and black pepper. Mix well until all ingredients are evenly incorporated.
Heat 1 tablespoon of olive oil in a large non-stick skillet over medium heat.
Scoop about 1/4 cup of the fritter mixture and shape it into a patty. Place the patty in the skillet. Repeat to make 3-4 fritters, making sure not to overcrowd the pan.
Cook the fritters for 5-7 minutes on each side, or until they are golden brown and the chicken is fully cooked through (internal temperature should reach 165°F or 74°C).
Transfer cooked fritters to a plate lined with paper towels to drain excess oil. Add the remaining 1 tablespoon of olive oil to the skillet and repeat the process with the remaining mixture.
Serve warm with your favorite dipping sauce or a side salad.
