A flavorful and high-protein chicken fajitas recipe featuring tender grilled chicken, sautéed bell peppers, and onions, served with warm tortillas. Perfect for a nutritious and satisfying meal.
1 pound boneless skinless chicken breast, thinly sliced
1 tablespoon olive oil
1 teaspoon ground cumin
1 teaspoon chili powder
1/2 teaspoon smoked paprika
1/2 teaspoon garlic powder
1/4 teaspoon salt
1/4 teaspoon black pepper
1 large red bell pepper, thinly sliced
1 large green bell pepper, thinly sliced
1 medium yellow onion, thinly sliced
8 small whole wheat tortillas
1/4 cup fresh cilantro, chopped
1 lime, cut into wedges
In a medium bowl, combine the sliced chicken breast, olive oil, ground cumin, chili powder, smoked paprika, garlic powder, salt, and black pepper. Mix well to coat the chicken evenly with the spices.
Heat a large skillet over medium-high heat. Add the seasoned chicken slices and cook for 5-7 minutes, stirring occasionally, until the chicken is cooked through and no longer pink inside. Remove the chicken from the skillet and set aside.
In the same skillet, add the sliced red bell pepper, green bell pepper, and yellow onion. Sauté for 5-7 minutes until the vegetables are tender-crisp.
Return the cooked chicken to the skillet with the vegetables. Stir to combine and heat through for 1-2 minutes.
Warm the whole wheat tortillas in a dry skillet or microwave for 20-30 seconds until pliable.
To serve, spoon the chicken and vegetable mixture onto each tortilla. Garnish with chopped fresh cilantro and a squeeze of lime juice.
Fold the tortillas and enjoy your high protein chicken fajitas.
