One Pot Vegetarian Pasta

A quick and easy one pot vegetarian pasta recipe that combines pasta, fresh vegetables, and flavorful seasonings for a delicious and wholesome meal.

12 ounces penne pasta
1 medium yellow onion, thinly sliced
3 cloves garlic, minced
1 medium red bell pepper, thinly sliced
1 medium zucchini, thinly sliced
1 cup cherry tomatoes, halved
4 cups vegetable broth
1 cup water
2 tablespoons olive oil
1 teaspoon dried oregano
1 teaspoon dried basil
1/2 teaspoon red pepper flakes
Salt, to taste
Freshly ground black pepper, to taste
1/2 cup grated Parmesan cheese
1/4 cup fresh basil leaves, chopped

Instructions

In a large pot or deep skillet, heat the olive oil over medium heat.
Add the sliced onion and cook for 3 minutes until softened.
Add the minced garlic and cook for 1 minute until fragrant.
Add the sliced red bell pepper, zucchini, and cherry tomatoes to the pot and stir to combine.
Pour in the vegetable broth and water.
Add the penne pasta, dried oregano, dried basil, red pepper flakes, salt, and black pepper.
Stir well to combine all ingredients and ensure the pasta is submerged in the liquid.
Bring the mixture to a boil over high heat.
Once boiling, reduce heat to medium-low and simmer uncovered, stirring occasionally, for 12 to 15 minutes or until the pasta is cooked and most of the liquid is absorbed.
Remove the pot from heat and stir in the grated Parmesan cheese and chopped fresh basil leaves.
Adjust seasoning with additional salt and pepper if needed.
Serve hot, garnished with extra Parmesan and basil if desired.
