Beef and Rice Freezer Meal

A hearty and convenient beef and rice freezer meal that’s perfect for busy weeknights. This recipe combines ground beef, rice, vegetables, and flavorful seasonings, all cooked together and ready to freeze for later enjoyment.

1 pound ground beef
1 medium onion, diced
2 cloves garlic, minced
1 cup long grain white rice, uncooked
2 cups beef broth
1 cup water
1 cup frozen mixed vegetables (carrots, peas, corn)
1 (14.5 ounce) can diced tomatoes, undrained
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon dried Italian seasoning
1 tablespoon olive oil

Instructions

Heat olive oil in a large skillet over medium heat.
Add diced onion and minced garlic to the skillet and sauté for 3-4 minutes until softened.
Add ground beef to the skillet and cook until browned, breaking it apart with a spoon as it cooks, about 6-8 minutes.
Drain any excess fat from the skillet.
Stir in uncooked rice, frozen mixed vegetables, diced tomatoes with their juice, beef broth, water, salt, black pepper, and Italian seasoning.
Bring the mixture to a boil, then reduce heat to low and cover the skillet with a lid.
Simmer for 20-25 minutes or until the rice is tender and liquid is absorbed.
Remove from heat and let the mixture cool completely before transferring to freezer-safe containers or bags.
Label and freeze for up to 3 months.
To reheat, thaw overnight in the refrigerator and warm in a skillet over medium heat until heated through.
