Vegan Gluten-Free Apple Muffins

Deliciously moist and fluffy vegan gluten-free apple muffins made with fresh apples, gluten-free flour, and natural sweeteners. Perfect for a healthy breakfast or snack.

2 cups gluten-free all-purpose flour blend
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon salt
1/2 cup organic cane sugar
1/4 cup unsweetened applesauce
1/4 cup melted coconut oil
1 cup unsweetened almond milk
1 teaspoon pure vanilla extract
1 tablespoon apple cider vinegar
1 1/2 cups peeled and finely chopped apple (about 1 medium apple)

Instructions

Preheat the oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners or lightly grease with coconut oil.
In a large mixing bowl, whisk together the gluten-free flour, baking powder, baking soda, ground cinnamon, ground nutmeg, salt, and organic cane sugar until well combined.
In a separate medium bowl, mix the unsweetened applesauce, melted coconut oil, almond milk, vanilla extract, and apple cider vinegar until smooth.
Pour the wet ingredients into the dry ingredients and stir gently until just combined. Do not overmix.
Fold in the finely chopped apples evenly into the batter.
Divide the batter evenly among the 12 muffin cups, filling each about 3/4 full.
Bake in the preheated oven for 22 to 25 minutes or until a toothpick inserted into the center of a muffin comes out clean.
Remove the muffins from the oven and allow them to cool in the tin for 5 minutes.
Transfer the muffins to a wire rack to cool completely before serving.
