A delicious and easy one-pan meal featuring tender chicken thighs cooked with sweet pineapple chunks and fluffy rice, infused with savory soy sauce and garlic flavors.
1 tablespoon vegetable oil
4 boneless, skinless chicken thighs
1 teaspoon salt
1/2 teaspoon black pepper
1 medium onion, diced
3 cloves garlic, minced
1 cup long grain white rice, rinsed
1 1/2 cups chicken broth
1 cup pineapple chunks, drained
1/4 cup soy sauce
1 tablespoon brown sugar
1/2 teaspoon ground ginger
2 green onions, sliced (for garnish)
1 tablespoon chopped fresh cilantro (for garnish)
Heat the vegetable oil in a large skillet over medium-high heat.
Season the chicken thighs with salt and black pepper on both sides.
Add the chicken thighs to the skillet and cook for 4-5 minutes on each side until golden brown. Remove the chicken from the skillet and set aside.
In the same skillet, add the diced onion and cook for 2-3 minutes until softened.
Add the minced garlic and cook for 30 seconds until fragrant.
Add the rinsed rice to the skillet and stir to coat it with the oil and onion mixture.
Pour in the chicken broth, soy sauce, brown sugar, and ground ginger. Stir to combine.
Return the chicken thighs to the skillet, placing them on top of the rice mixture.
Scatter the pineapple chunks evenly over the chicken and rice.
Bring the mixture to a boil, then reduce heat to low. Cover the skillet with a lid and simmer for 20 minutes, or until the rice is tender and the chicken is cooked through.
Remove from heat and let it sit covered for 5 minutes.
Garnish with sliced green onions and chopped fresh cilantro before serving.
