A flavorful and easy low carb dinner featuring turkey kielbasa sautéed with bell peppers, zucchini, and onions, seasoned with garlic and smoked paprika. Perfect for a quick and healthy meal.
1 pound turkey kielbasa, sliced into 1/2-inch pieces
1 medium red bell pepper, sliced into thin strips
1 medium yellow bell pepper, sliced into thin strips
1 medium zucchini, sliced into half-moons
1 medium yellow onion, thinly sliced
3 cloves garlic, minced
2 tablespoons olive oil
1 teaspoon smoked paprika
1/2 teaspoon dried oregano
1/4 teaspoon crushed red pepper flakes
Salt, to taste
Black pepper, to taste
2 tablespoons fresh parsley, chopped (for garnish)
Heat 1 tablespoon of olive oil in a large skillet over medium heat.
Add the sliced turkey kielbasa to the skillet and cook for 4 to 5 minutes, stirring occasionally, until browned and heated through. Remove kielbasa from the skillet and set aside.
In the same skillet, add the remaining 1 tablespoon of olive oil.
Add the sliced onions and bell peppers to the skillet and sauté for 4 minutes until they begin to soften.
Add the zucchini slices and minced garlic to the skillet. Cook for an additional 4 minutes, stirring occasionally, until the zucchini is tender.
Return the cooked turkey kielbasa to the skillet with the vegetables.
Sprinkle smoked paprika, dried oregano, crushed red pepper flakes, salt, and black pepper over the mixture. Stir well to combine and cook for 2 more minutes to allow flavors to meld.
Remove from heat and garnish with chopped fresh parsley before serving.
