Lemon Herb Roasted Chicken

A flavorful and juicy lemon herb roasted chicken with a crispy golden skin, infused with fresh lemon juice, garlic, and aromatic herbs. Perfect for a comforting family dinner.

1 whole chicken (about 4 pounds), giblets removed
2 tablespoons olive oil
1 lemon, zested and juiced
4 garlic cloves, minced
1 tablespoon fresh rosemary, chopped
1 tablespoon fresh thyme leaves
1 teaspoon salt
1/2 teaspoon black pepper
1 lemon, quartered
4 sprigs fresh rosemary
4 sprigs fresh thyme

Instructions

Preheat the oven to 425°F (220°C).
In a small bowl, combine olive oil, lemon zest, lemon juice, minced garlic, chopped rosemary, thyme leaves, salt, and black pepper to create the herb marinade.
Pat the whole chicken dry with paper towels.
Rub the herb marinade all over the chicken, including under the skin and inside the cavity.
Place the quartered lemon and fresh rosemary and thyme sprigs inside the chicken cavity.
Tie the legs together with kitchen twine and tuck the wing tips under the body.
Place the chicken breast side up on a roasting rack set inside a roasting pan.
Roast the chicken in the preheated oven for 1 hour and 15 minutes, or until the internal temperature reaches 165°F (74°C) when measured at the thickest part of the thigh.
Remove the chicken from the oven and let it rest for 10 minutes before carving.
Carve the chicken and serve warm.
