These Peanut Butter Cookie Pretzel Bites combine the salty crunch of pretzels with the sweet, rich flavor of peanut butter cookies for a perfect bite-sized treat.
1 cup creamy peanut butter
1/2 cup granulated sugar
1/2 cup packed light brown sugar
1 large egg
1 teaspoon vanilla extract
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup all-purpose flour
24 mini pretzels
Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a large bowl, mix the creamy peanut butter, granulated sugar, and light brown sugar until smooth and creamy.
Add the egg and vanilla extract to the peanut butter mixture and stir until fully combined.
In a separate bowl, whisk together the baking soda, salt, and all-purpose flour.
Gradually add the dry ingredients to the peanut butter mixture, stirring until a soft dough forms.
Roll the dough into 24 equal-sized balls and place them on the prepared baking sheet about 2 inches apart.
Press one mini pretzel gently into the center of each dough ball.
Bake in the preheated oven for 8 to 10 minutes, or until the edges are lightly golden.
Remove from the oven and allow the cookie pretzel bites to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
