A hearty and nutritious ground beef and kale dinner that’s quick to prepare and packed with flavor. Perfect for a wholesome weeknight meal.
1 tablespoon olive oil
1 medium yellow onion, diced
3 cloves garlic, minced
1 pound ground beef
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon crushed red pepper flakes
1/2 teaspoon smoked paprika
1 bunch kale (about 6 cups), stems removed and leaves chopped
1/2 cup beef broth
1 tablespoon Worcestershire sauce
Heat olive oil in a large skillet over medium heat.
Add diced onion and cook for 3-4 minutes until softened.
Add minced garlic and cook for 1 minute until fragrant.
Add ground beef to the skillet. Break it apart with a spoon and cook until browned, about 6-8 minutes.
Season the beef with salt, black pepper, crushed red pepper flakes, and smoked paprika. Stir to combine.
Add chopped kale to the skillet and pour in the beef broth and Worcestershire sauce.
Stir everything together, cover the skillet, and cook for 5-7 minutes until the kale is wilted and tender.
Remove the lid and cook for an additional 2 minutes to allow any excess liquid to evaporate.
Taste and adjust seasoning if needed. Serve warm.
