Ground Beef Fajitas

A quick and flavorful ground beef fajitas recipe featuring seasoned beef, sautéed bell peppers, and onions, perfect for a delicious weeknight dinner.

1 pound ground beef
1 tablespoon olive oil
1 medium red bell pepper, thinly sliced
1 medium green bell pepper, thinly sliced
1 medium yellow bell pepper, thinly sliced
1 medium onion, thinly sliced
2 cloves garlic, minced
1 teaspoon chili powder
1 teaspoon ground cumin
1/2 teaspoon smoked paprika
1/2 teaspoon dried oregano
1/4 teaspoon cayenne pepper
1/2 teaspoon salt
1/4 teaspoon black pepper
8 small flour tortillas
1/2 cup shredded cheddar cheese
1/2 cup sour cream
1/2 cup fresh cilantro leaves, chopped
1 lime, cut into wedges

Instructions

Heat olive oil in a large skillet over medium-high heat.
Add the sliced onions and bell peppers to the skillet and sauté for 5-7 minutes until they are tender and slightly caramelized. Remove the vegetables from the skillet and set aside.
In the same skillet, add the ground beef and cook, breaking it apart with a spatula, until browned and cooked through, about 6-8 minutes.
Add the minced garlic, chili powder, ground cumin, smoked paprika, dried oregano, cayenne pepper, salt, and black pepper to the cooked ground beef. Stir well to combine and cook for an additional 1-2 minutes to toast the spices.
Return the sautéed bell peppers and onions to the skillet with the seasoned ground beef. Stir to combine and heat through for 1-2 minutes.
Warm the flour tortillas in a dry skillet or microwave for 20-30 seconds until pliable.
To assemble the fajitas, spoon the ground beef and vegetable mixture onto each tortilla.
Top with shredded cheddar cheese, a dollop of sour cream, and sprinkle with chopped fresh cilantro.
Serve immediately with lime wedges on the side for squeezing over the fajitas.
