1 pound ground beef
1 tablespoon olive oil
1 medium yellow onion, diced
2 cloves garlic, minced
1 medium red bell pepper, diced
1 medium zucchini, diced
1 cup baby carrots, sliced
1 cup frozen corn kernels
1 can (14.5 ounces) diced tomatoes, drained
1 teaspoon dried Italian seasoning
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon crushed red pepper flakes
2 tablespoons chopped fresh parsley
Heat olive oil in a large skillet over medium-high heat.
Add diced onion and cook for 2-3 minutes until softened.
Add minced garlic and cook for 30 seconds until fragrant.
Add ground beef to the skillet and cook, breaking it apart with a spatula, until browned and cooked through, about 5-7 minutes.
Drain excess fat from the skillet if necessary.
Add diced red bell pepper, diced zucchini, sliced baby carrots, and frozen corn to the skillet. Stir to combine.
Cook the vegetables with the beef for 5-7 minutes until they are tender but still crisp.
Add the drained diced tomatoes, dried Italian seasoning, salt, black pepper, and crushed red pepper flakes. Stir well to combine all ingredients.
Reduce heat to medium-low and simmer for 3-5 minutes to allow flavors to meld.
Remove from heat and sprinkle chopped fresh parsley over the skillet before serving.
