Mexican Chicken Stir-Fry

A quick and flavorful Mexican Chicken Stir-Fry packed with vibrant vegetables and seasoned with classic Mexican spices. Perfect for a healthy weeknight dinner.

1 pound boneless skinless chicken breasts, thinly sliced
2 tablespoons olive oil
1 medium red bell pepper, thinly sliced
1 medium green bell pepper, thinly sliced
1 medium yellow bell pepper, thinly sliced
1 medium red onion, thinly sliced
2 cloves garlic, minced
1 teaspoon ground cumin
1 teaspoon chili powder
1/2 teaspoon smoked paprika
1/4 teaspoon ground black pepper
1/2 teaspoon salt
1 cup cherry tomatoes, halved
1/4 cup fresh cilantro, chopped
1 tablespoon fresh lime juice

Instructions

In a small bowl, combine ground cumin, chili powder, smoked paprika, salt, and black pepper. Set aside.
Heat 1 tablespoon of olive oil in a large skillet or wok over medium-high heat.
Add the thinly sliced chicken breasts to the skillet and sprinkle half of the spice mixture over the chicken.
Cook the chicken for 5 to 7 minutes, stirring occasionally, until fully cooked and lightly browned. Remove the chicken from the skillet and set aside.
Add the remaining 1 tablespoon of olive oil to the same skillet.
Add the sliced red onion, red bell pepper, green bell pepper, and yellow bell pepper to the skillet. Stir-fry for 4 to 5 minutes until the vegetables are tender-crisp.
Add the minced garlic and cook for an additional 30 seconds until fragrant.
Return the cooked chicken to the skillet and sprinkle the remaining spice mixture over the ingredients.
Add the halved cherry tomatoes and stir everything together, cooking for another 2 minutes to combine flavors.
Remove the skillet from heat and stir in the fresh lime juice and chopped cilantro.
Serve immediately with rice, tortillas, or your favorite Mexican side dish.
