A quick and easy sheet pan meal featuring flavorful spinach and feta chicken sausage, roasted potatoes, and colorful vegetables, perfect for a wholesome weeknight dinner.
1 pound spinach feta chicken sausage, sliced into 1/2-inch rounds
1 pound baby potatoes, halved
1 red bell pepper, cut into 1-inch pieces
1 yellow bell pepper, cut into 1-inch pieces
1 medium red onion, cut into 1-inch pieces
3 tablespoons olive oil
3 cloves garlic, minced
1 teaspoon dried oregano
1/2 teaspoon smoked paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
2 cups fresh baby spinach
Preheat the oven to 425°F (220°C).
In a large bowl, combine the halved baby potatoes, red bell pepper pieces, yellow bell pepper pieces, and red onion pieces.
Add 2 tablespoons of olive oil, minced garlic, dried oregano, smoked paprika, salt, and black pepper to the vegetables. Toss well to coat evenly.
Spread the seasoned vegetables in a single layer on a large sheet pan.
Place the sliced spinach feta chicken sausage evenly over the vegetables on the sheet pan.
Drizzle the remaining 1 tablespoon of olive oil over the sausage and vegetables.
Roast in the preheated oven for 20 minutes.
Remove the sheet pan from the oven and scatter the fresh baby spinach over the sausage and vegetables.
Return the sheet pan to the oven and roast for an additional 5 minutes, or until the sausage is cooked through, potatoes are tender, and spinach is wilted.
Remove from the oven and let cool for 2 minutes before serving.
