Ground Beef Dinner Bake

A hearty and comforting ground beef dinner bake layered with seasoned ground beef, creamy mashed potatoes, and melted cheese, perfect for a family meal.

1 pound ground beef
1 medium onion, diced
2 cloves garlic, minced
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon dried thyme
1/2 teaspoon dried oregano
1 cup frozen mixed vegetables (carrots, peas, corn)
3 cups mashed potatoes (prepared from about 2 pounds potatoes)
1 cup shredded cheddar cheese
2 tablespoons olive oil

Instructions

Preheat the oven to 375°F (190°C).
Heat olive oil in a large skillet over medium heat.
Add diced onion and minced garlic to the skillet and sauté until softened, about 3-4 minutes.
Add ground beef to the skillet and cook, breaking it apart with a spoon, until browned and cooked through, about 6-8 minutes.
Drain excess fat from the skillet.
Season the beef mixture with salt, black pepper, dried thyme, and dried oregano. Stir to combine.
Add frozen mixed vegetables to the beef mixture and cook for another 3-4 minutes until vegetables are heated through.
Transfer the beef and vegetable mixture to a 9×9 inch baking dish and spread evenly.
Spread the prepared mashed potatoes evenly over the beef and vegetable layer.
Sprinkle shredded cheddar cheese evenly over the mashed potatoes.
Bake in the preheated oven for 25 minutes, or until the cheese is melted and bubbly.
Remove from the oven and let cool for 5 minutes before serving.
