These Banana Muffin Mix Cookies are a quick and easy treat that combines the flavors of banana muffins with the convenience of cookies. Using banana muffin mix as the base, these cookies are soft, moist, and packed with banana flavor, perfect for a snack or dessert.

1 cup banana muffin mix
1/2 cup all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1/4 cup unsalted butter, softened
1/4 cup granulated sugar
1/4 cup packed light brown sugar
1 large egg
1 teaspoon vanilla extract
1/2 cup mashed ripe banana (about 1 medium banana)
1/2 cup chopped walnuts (optional)

Instructions

Preheat the oven to 350°F (175°C). Line two baking sheets with parchment paper.
In a medium bowl, whisk together the banana muffin mix, all-purpose flour, baking soda, and salt until well combined.
In a large bowl, using an electric mixer, cream the softened butter, granulated sugar, and light brown sugar together until light and fluffy, about 2 minutes.
Add the egg and vanilla extract to the butter mixture and beat until fully incorporated.
Mix in the mashed banana until evenly combined.
Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Do not overmix.
If using, fold in the chopped walnuts with a spatula.
Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
Bake for 10 to 12 minutes, or until the edges are lightly golden and the centers are set.
Remove from the oven and allow the cookies to cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
