Beef Stir Fry Dinner

A quick and flavorful beef stir fry dinner featuring tender strips of beef, crisp vegetables, and a savory soy-ginger sauce. Perfect for a healthy weeknight meal.

1 pound beef sirloin, thinly sliced into strips
2 tablespoons vegetable oil, divided
1 red bell pepper, thinly sliced
1 yellow bell pepper, thinly sliced
1 medium carrot, peeled and julienned
1 cup broccoli florets
3 cloves garlic, minced
1 tablespoon fresh ginger, minced
1/4 cup low sodium soy sauce
2 tablespoons oyster sauce
1 tablespoon rice vinegar
1 tablespoon brown sugar
1 teaspoon cornstarch
1/4 cup water
2 green onions, sliced
1/4 teaspoon crushed red pepper flakes
Cooked white rice, for serving

Instructions

In a small bowl, whisk together soy sauce, oyster sauce, rice vinegar, brown sugar, cornstarch, and water until smooth. Set aside.
Heat 1 tablespoon vegetable oil in a large skillet or wok over medium-high heat.
Add the sliced beef to the skillet and stir-fry for 3-4 minutes until browned and just cooked through. Remove beef from skillet and set aside.
Add the remaining 1 tablespoon vegetable oil to the skillet.
Add minced garlic and ginger and stir-fry for 30 seconds until fragrant.
Add the bell peppers, carrot, and broccoli florets to the skillet. Stir-fry for 4-5 minutes until vegetables are crisp-tender.
Return the cooked beef to the skillet with the vegetables.
Pour the sauce mixture over the beef and vegetables. Stir well to coat everything evenly.
Cook for another 2 minutes, stirring frequently, until the sauce has thickened.
Stir in sliced green onions and crushed red pepper flakes.
Serve the beef stir fry hot over cooked white rice.
