One Pot Chicken and Noodles

A comforting and easy one pot chicken and noodles recipe with tender chicken, flavorful broth, and perfectly cooked noodles all in one skillet.

2 tablespoons olive oil
1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
1 medium yellow onion, diced
3 cloves garlic, minced
4 cups low sodium chicken broth
1 cup whole milk
8 ounces egg noodles
2 medium carrots, peeled and sliced
2 stalks celery, sliced
1 teaspoon dried thyme
1 teaspoon dried parsley
1/2 teaspoon salt
1/4 teaspoon black pepper

Instructions

Heat olive oil in a large deep skillet or Dutch oven over medium-high heat.
Add the chicken pieces and cook until browned on all sides, about 5 minutes. Remove chicken from the skillet and set aside.
In the same skillet, add the diced onion, sliced carrots, and sliced celery. Cook until the vegetables are softened, about 5 minutes.
Add the minced garlic and cook for 1 minute until fragrant.
Pour in the chicken broth and whole milk, stirring to combine.
Add the dried thyme, dried parsley, salt, and black pepper.
Return the browned chicken to the skillet.
Bring the mixture to a boil, then reduce heat to medium-low and add the egg noodles.
Cover and simmer for 10 to 12 minutes, stirring occasionally, until the noodles are tender and the chicken is cooked through.
Remove from heat and let sit covered for 2 minutes before serving.
