2 pounds beef chuck, cut into 1 1/2-inch cubes
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
3 tablespoons all-purpose flour
2 tablespoons olive oil
1 large onion, chopped
3 cloves garlic, minced
4 medium carrots, peeled and cut into 1-inch pieces
3 stalks celery, cut into 1-inch pieces
3 medium Yukon Gold potatoes, peeled and cut into 1 1/2-inch chunks
2 cups beef broth
1 cup dry red wine
1 tablespoon tomato paste
1 teaspoon dried thyme
1 teaspoon dried rosemary
2 bay leaves
1 cup frozen peas, thawed
2 tablespoons chopped fresh parsley
Pat the beef cubes dry with paper towels. Season with kosher salt and black pepper.
Place the flour in a shallow dish and dredge the beef cubes in the flour, shaking off any excess.
Heat the olive oil in a large skillet over medium-high heat. Add the beef cubes in batches and brown on all sides, about 3-4 minutes per batch. Transfer browned beef to the slow cooker.
In the same skillet, add the chopped onion and cook until softened, about 4 minutes. Add the minced garlic and cook for 1 minute more.
Transfer the onion and garlic to the slow cooker with the beef.
Add the carrots, celery, and potatoes to the slow cooker.
