A sweet and buttery sugar cookie crust that serves as a delicious base for pies and tarts, combining the classic flavors of sugar cookies with the convenience of a pie crust.

1 1/2 cups all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 cup unsalted butter, softened
3/4 cup granulated sugar
1 large egg
1 teaspoon vanilla extract

Instructions

Preheat the oven to 350°F (175°C).
In a medium bowl, whisk together the all-purpose flour, baking powder, and salt until well combined.
In a large bowl, beat the softened unsalted butter and granulated sugar together with an electric mixer on medium speed until light and fluffy, about 2-3 minutes.
Add the egg and vanilla extract to the butter mixture and beat until fully incorporated.
Gradually add the dry ingredients to the wet ingredients, mixing on low speed until a soft dough forms.
Press the dough evenly into the bottom and up the sides of a 9-inch pie dish, ensuring an even thickness.
Use a fork to prick the bottom of the crust several times to prevent bubbling during baking.
Bake the crust in the preheated oven for 12 minutes, or until the edges are lightly golden.
Remove from the oven and allow the crust to cool completely before adding any filling.
