Tender boneless skinless chicken thighs pan-seared and simmered in a creamy sun-dried tomato sauce with garlic and herbs.
4 boneless skinless chicken thighs
2 tablespoons olive oil
1 tablespoon butter
4 garlic cloves, minced
1/3 cup sun-dried tomatoes, chopped
1 cup heavy cream
1/4 cup parmesan cheese, grated
1/2 cup chicken broth
1/4 teaspoon red pepper flakes
2 tablespoons fresh basil, chopped
Salt, to taste
Black pepper, to taste
Season chicken thighs with salt and black pepper.
Heat olive oil and butter in a large skillet over medium heat.
Add chicken thighs and pan-sear until golden brown on both sides, about 5-6 minutes per side. Remove and set aside.
In the same skillet, add minced garlic and sun-dried tomatoes; sauté for 1-2 minutes until fragrant.
Pour in chicken broth, scraping up any browned bits from the pan.
Stir in heavy cream, parmesan cheese, and red pepper flakes. Bring to a simmer.
Return chicken thighs to the skillet, spoon sauce over them, cover, and simmer gently for 10-12 minutes until chicken is cooked through.
Stir in fresh basil, adjust seasoning with salt and pepper.
Plate chicken thighs in the center, spoon sauce generously over and around, garnish with additional fresh basil leaves.
