A flavorful and easy-to-make Garlic Mushroom Chicken recipe featuring tender chicken breasts cooked with garlic, mushrooms, and a savory sauce. Perfect for a comforting weeknight dinner.
4 boneless, skinless chicken breasts
1 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons olive oil
4 cloves garlic, minced
8 ounces cremini mushrooms, sliced
1/2 cup chicken broth
1/4 cup heavy cream
1 teaspoon dried thyme
1 tablespoon unsalted butter
2 tablespoons chopped fresh parsley
Season both sides of the chicken breasts with salt and black pepper.
Heat olive oil in a large skillet over medium-high heat.
Add the chicken breasts to the skillet and cook for 5-6 minutes on each side until golden brown and cooked through. Remove the chicken from the skillet and set aside.
In the same skillet, add the minced garlic and sliced mushrooms. Cook for 4-5 minutes, stirring occasionally, until the mushrooms are browned and tender.
Pour in the chicken broth and bring to a simmer, scraping any browned bits from the bottom of the skillet.
Stir in the heavy cream, dried thyme, and butter. Cook for 2-3 minutes until the sauce thickens slightly.
Return the chicken breasts to the skillet and spoon the mushroom sauce over them. Cook for an additional 2 minutes to heat through.
Sprinkle chopped fresh parsley over the chicken and sauce before serving.
