A moist and flavorful zucchini bread naturally sweetened with honey, perfect for breakfast or a snack.
2 cups grated zucchini (about 2 medium zucchinis, unpeeled)
1/2 cup honey
1/2 cup vegetable oil
2 large eggs
1 1/2 cups all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1 teaspoon vanilla extract
Preheat the oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
In a large bowl, whisk together the honey, vegetable oil, and eggs until well combined.
Add the grated zucchini and vanilla extract to the wet mixture and stir until evenly mixed.
In a separate bowl, sift together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined. Do not overmix.
Pour the batter into the prepared loaf pan and spread it evenly.
Bake in the preheated oven for 50 to 55 minutes, or until a toothpick inserted into the center comes out clean.
Remove the bread from the oven and allow it to cool in the pan for 10 minutes.
