A creamy, cheesy chicken casserole with cooked shredded chicken breast, cream of chicken soup, sour cream, cheddar cheese, cooked rice, green chilies, and green onions, topped with a buttery crushed cracker crust. Baked to a golden, bubbly finish.
3 cups cooked shredded chicken breast
1 can (10.5 oz) cream of chicken soup
1 cup sour cream
2 cups shredded cheddar cheese
2 cups cooked rice
1 can (4 oz) diced green chilies, drained
3 green onions, chopped
1 1/2 cups crushed buttery crackers
4 tablespoons butter, melted
Preheat oven to 350°F (175°C).
In a large mixing bowl, combine the cooked shredded chicken, cream of chicken soup, sour cream, shredded cheddar cheese, cooked rice, diced green chilies, and chopped green onions. Mix gently until evenly blended.
Transfer the mixture to a greased square or rectangular casserole dish and spread evenly.
In a small bowl, mix the crushed buttery crackers with melted butter until the crumbs are fully coated.
Sprinkle the buttery cracker mixture evenly over the top of the casserole.
Bake uncovered for 40-45 minutes, or until the casserole is bubbly and the cracker topping is golden brown.
Remove from oven and let rest for 5 minutes before serving. Cut into neat squares and serve warm.
